While we were in London for my training interviews, we met up with some of my old medical school friends for brunch. I know what you are thinking, poor Dan sat around a bunch of boring doctors talking about medicine all the time. And while it is true that we inadvertently do end up talking about medicine a lot , it is exactly the same with his engineer colleagues – so I feel slightly less guilty about it now. I also like to point out that at the very least there is one perk, should he choke or require any medical attention at that point of time, he is surrounded by a bunch of medical professionals who know how to perform the Heimlich or worse case scenario CPR. I say it’s a fair trade off.
However this time it was a different. I am used to the glazed over look he gets whenever we start talking about medicine, but this time something was not quite right. I apologised again for our bad behaviour and for boring him senseless to which he repeatedly said “It was fine” and “Not an issue”, but clearly something was not quite right. So I pressed further feeling rather guilty (and worried I might add) before he finally admitted that he was just slightly annoyed because he meant to order the baked eggs (insert Spanish name here) like I did, but had accidentally ordered the scrambled eggs with jalapeños and chorizo instead!
Which was yummy by the way, but not what he had been dreaming of as we sat there waiting for our food. I cannot make these things up! Good news though, crisis averted, marriage still very much intact and he continues to zone out as his dad, brother, my friends and I babble on about medicine – all is right in the universe once again.
So for his birthday, I had the brilliant idea of making him his favourite baked eggs with Chorizo for breakfast! But of course, I did not have a pan that could go from hob to oven to bake the eggs (like every recipe said I needed) and when I had decided that I simply needed to buy one, that very day they announced that all shops would be closed as stricter measures were being put in place because of Covid! Perfect!
But I figured, surely they would be fine just done on the stove, no? And they were!
We had them again today morning and I can tell they are going to be one of our staple weekend/dinner meals! If you would like to make this vegetarian – just leave out the chorizo like we did this weekend or swap for vegetarian sausage. And if you cannot find chorizo or don’t like it, sausages work just as well.
So this is my no bake … baked eggs recipe.
Ingredients (feeds 4)
Chorizo 75gm – sliced
1/2 yellow pepper sliced
1/2 red pointed pepper sliced (red pepper is fine too)
8 cherry/plum tomatoes chopped
1/2 red/white onion sliced
1 large flat mushroom sliced (3 chestnut/white mushrooms)
1 can of chopped tomatoes
1 tsp cumin
1 tsp paprika
1 tsp chilli powder
salt and pepper to taste
4 eggs
Method
1 Fry onions in olive oil. Once they start to sweat add tomatoes.
2. As tomatoes start to break down, add cumin and paprika. Stir well.
3. Add mushrooms, 50ml of water, salt and pepper to taste.
4. Add peppers, chopped can tomatoes and chilli powder. Stir well.
5. Let simmer for about 5 minutes.
6. Add chorizo, stir in and let it simmer for another 5 minutes.
7. Make little holes for the eggs. Break individual eggs into designated ‘dug out space’
8. If you want your eggs runny, then cover and let simmer on medium heat for about 4 minutes until the egg whites are set. If you don’t want runny eggs then cook for about 8 – 10 minutes on medium heat.
