Use all the leftovers! – Egg cups

I love these egg cups. 

They are quick to throw together (literally a couple of minutes), can feed loads of people and are a great way to get rid of leftovers. 

With Dan off from work and his tendency to graze, I figured it was best to just prepare a couple of snacks and with the rest of you probably in a similar situation – especially if you have kids or lots of people over, this is great to prepare ahead and can be stored for about 5 days in the fridge or frozen for a month ( Dan thinks they taste fine, I personally feel it changes the taste a little – so I don’t recommend it).

The very first time I made these was after watching a video in 2017, I was alone at home that evening as everyone else was working nights or the late shift and I needed something to do, to make sure I did not just fall asleep cause that would have ruined my night shift the following day. I figured it would be perfect for work the next day and last me a couple of days, however my hungry housemates back from their late/night shifts thought they were the perfect snack! 

While the original recipe called for bacon, eggs and mozzarella lined on top of some bread – which to be fair is yummy! Over time, I have tried other combinations (some I will never repeat again!) and have come up with some go to’s – they usually involve leftovers.

All combinations are for one full tray of 12
Preheat oven to 180C, and cook for 15 – 20 minutes!
To reheat just pop in the microwave (on a microwave safe plate of course!) for about 30 seconds on high.

Base 

10 – 12 eggs (if large 10)
Pepper and salt to taste 

Or 
6 eggs (large eggs) if Medium 8
100ml milk (alternative milks are fine too)
Pepper and salt to taste

Or 
If you like to make your omelette a particular way just use that as a base!

Combinations

Baked bacon and eggs
Bacon – streaky is best 
12 Eggs (You use the whole egg)
Cheese grated – Mozzarella/Parmesan/Cheddar – either is great
Pepper to taste

Mini quiche 
5 Cherry tomatoes diced
4 Mushrooms diced (you can used tinned ones too)
1 cup Spinach (can use frozen spinach too)
Feta cheese crumbled on top (it is nice with Mozzarella too)

American Hot (inspired by Dan’s favourite Dominos order)
6 Slices of Salami shredded
Jalapeños diced
1/2 Red Pepper
Mozzarella cheese 

Spicy Red Pepper
1 Red Pepper diced
Jalapeños – 1 on each
Feta Cheese (Mozzarella is fine too)

Fajita egg cups (if you even have any leftovers from Fajitas!)
This is using leftovers
Red/Green peppers
Onions
Chicken/Beef 
Jalapeños  (can omit)
Paprika 1 tsp

Masala Egg Cup 
1 Red onion – diced 
1 Tomato – diced
Fresh Coriander – omit if not keen 
1 heaped tsp garam masala
1 – 2 green chillis diced fine (depending on how much you like chillies)

Beanie Cups 
1/2 tin blackbeans 
4 cherry tomatoes diced 
1/2 red pepper diced 
1/2 red onion diced
Lime juice 1tbsp 
Coriander – omit if you want 
Mozarella and cheddar cheese mixed – so much better this way
**Mix the red pepper, tomatoes and onion together with salt, pepper and lime juice** 
If you have made salsa the night before just make extra and use that!
