Hello summer!
While I still need to have a hot meal at least once a day- it has been rather warm in our heat trap of a flat (not complaining! Though I probably will start in a few days), that I have been craving something that feels a little lighter and does not involve me standing over a hot stove.
So it is obviously time for some summery salads! And while I know salads aren’t exactly the most exciting of meals to many (myself included), I have grown to actually crave and genuinely enjoy a few of them which I will share with you as we have them over the next few weeks.

This is my halloumi salad with a grapefruit vinaigrette. In this salad, I use crunchy kale that has been blanched as a base, and for a little colour as well as a tart-sweet flavour, some pomegranate seeds which I feel compliments the bittersweet taste of the honey grapefruit vinaigrette.
Recipe (Serves 2)
75gm Crunchy Kale
45gm Watercress Salad
225gm Chilli/Plain Halloumi
10 – 15 thinly sliced cucumbers halved
3 tbsp Sunflower Seeds
80gm Pomegranate Seeds
60gm Blueberries
Vinaigrette
1 tablespoon Olive oil 3 tablespoons fresh Grapefruit juice
1 tsp honey
1/4 tsp mustard
Steps
1.Slice the halloumi into small bite-size pieces and fry on a non-stick frying pan till brown.
2. Blanch kale in boiling water for 2-3 minutes then run under cold water.
3. Toss watercress, kale and cucumber in vinaigrette.
4. Top with blueberries, pomegranate seeds, sunflower seeds, halloumi and serve.
